Celery Festive Bowl

Ingredients - salad

A bundle of celery (4-5 stalks)

½ cup soft pitted dates

½ cup walnut pieces

A handful of cranberries, dried and sweetened

3 scallion stalks

Ingredients - dressing

3 tbsps lemon juice, freshly squeezed

1 tsp mustard

2 tbsps Silan

4 tbsps extra virgin olive oil

1 small garlic clove, minced

A pinch of salt

Let's get cooking!

Chop the celery to about an inch sized-pieces, like in the picture above. Place them in a serving bowl.

Chop the dates to 1/2 inch pieces, as well as the scallions, and add them to the bowl. Add the cranberries and mix the ingredients until they're all well blended.

Mix all the dressing ingredients well and keep in a container.

Right before serving, add the walnut pieces and drizzle the dressing on the salad. Mix well. If for any reason, allergy or taste, you'd rather substitute the walnuts for a different nut or seed, that is completely doable! A really good alternative would be pecan pieces, but you can definitely use whatever you like, as long as you like it!
