Baking soda & vinegar

When baking soda and apple vinegar meet, they form a chemical reaction that causes them to ferment, and that's why these two are popular in the vegan kitchen. They help cakes to become more fluffy and light.

Importantly, always combine them last, just a second before your batter goes into the oven, and always make sure it's a hot oven!

Egg Alternatives

1 tbsp Flaxseed meal + 45ml/ 3 tbsps water = 1 egg

1/2 mashed banana = 1 egg

1/4 cup unsweetened apple sauce = 1 egg

3 tbsps peanut butter = 1 egg

1 tbsps Tapioca + 2 tbsps water = 1 egg

1/4 cup silk tofu = 1 egg

3 tbsps Tahini + 2 tbsps water = 1 egg

Kala Namak

Kala Namak is a rock salt, also known as "Himalayan black salt". It has a sulfurous smell, and that's why many vegan recipes use it to add an egg aroma to the dish.

Extra Virgin Olive Oil

Olive oil is a very healthy oil produced from olives (what else), which are a staple plant of the Mediterranean cuisine. While there are various types of olive oil, including refined (with undesirable odors and flavors removed), virgin (with some minor flaws) and others, the extra virgin is considered the highest grade, with no flaws in taste or aroma. It is costly to produce, and is therefore more expensive to purchase. I recommend in most of the recipes to use it, especially in salads (because of it's relatively low smoking point).
