Just as my logo implies, I love coffee :) As a mom of 3 young boys, and ULTRA energetic ones, coffee is an essential necessity. That's why the evenings are sacred, when they are asleep, and I can have my cup of coffee and a good comforting cake like this one here. The most dominant ingredients are coconut cream & walnuts, and that was supposed to be the essence of this recipe. But when I was a minute from putting the cake in the oven, and was mixing the ingredients, the brown sugar I used gave the mixture it's creamy color, and then it hit me that I just have to add a shot of espresso to get the cake the final touch and the perfect combination of cream-coffee-nuts! And on that note, I'm nuts about (vegan) cream in my coffee!

Use a 9'' (22cm) springform cake pan

Ingredients

1 Cup of walnut pieces

7oz (200g) Coconut cream

6.3oz (180g) vegan butter, cut to 1''cubes (You can use the homemade butter according to this recipe, or FYH one)

6oz (170g) brown sugar

9.1oz (260g) self-rising flour

1.7 fl oz (50ml) espresso (or brewed coffee of your choice)

2 tbsps flaxseed meal

1.5 fl oz (45ml) plant-based milk (I use Cashew&Almond by Silk)

1tsp Vanilla extract

1tsp Baking soda

1tsp Apple vinegar

1.5tsps Baking powder

Let's get baking!

Turn on the oven on 350F/170C.

In a mixer, mix the butter cubes and the sugar very well until you get a creamy smooth texture. Turn off the mixer, and add the walnuts, cream, espresso, vanilla extract and vinegar. Mix well.

In a separate small bowl or cup, mix the milk & flaxseed meal for about 30-60 seconds, until the mixture thickens, and then add it to the mixing bowl with all the ingredients you already mixed together.

Last, mix the flour, baking soda and baking powder.

Make sure the oven has reached the desired temperature.

Now combine the two mixtures into one, pour it to the cake springform pan, and immediately place it in the oven.

Bake for 45 minutes and then check to make sure that a toothpick you stick in the middle of the cake comes out clean or with crumbs.
