Ingredients

For the salad

8.5oz/ 250g Mix greens (Arugula, baby spinach)

1/2 cup Raw walnuts (pieces)

1/2 cup Sweetened cranberries

3 tbsps pumpkin seeds

3 steamed-beets

1/2 Purple onion

For the dressing

3 tbsps lemon juice

6 tbsps extra virgin olive oil

1 tbsp Silan

1 tsp mustard

1/2 garlic clove, minced

1 tbsp Balsamic vinegar

Let's get chopping!

Wash your greens well and place in a strainer to get rid of the water.

Slice the onion to thin halves, and cut the beets to about 1 inch pieces.

Before serving, add the walnuts, cranberries and pumpkin seeds. If these are added a while before serving, they might lose their crunchiness.

Drizzle a generous amount of dressing (or all of it, depending on your personal taste) and serve with bread and spreads for breakfast or dinner!
