Ingredients

1 medium onion
1 Bell pepper (red/orange/yellow)
10-15 Champignon mushrooms
1 Garlic clove, minced
1 Cup frozen peas
Add 4 tbsps oil and heat up a deep pan.
Fry the onion for about 10 minutes on medium heat, or until the onions are golden in color.
To the pan with the onions, add the peppers and stir. Cook for another 5 minutes. Add garlic and stir for 30 seconds.
Turn the heat up and add the mushrooms and peas. Add salt & pepper and stir well. Cook with frequent stirring for 2-3 minutes.
I always soak the noodles in boiling hot water for a few minutes before I add them to the pan with the veggies. If they're half-way ready in the water, they'll get fully-cooked by soaking in the sauce.
Add the coconut cream and curry paste, and mix well. Reduce the heat to medium and add the noodles. Cook for 4-5 minutes and serve while hot!
