240ml (8oz) Orange juice
Orange zest from two oranges
120ml (4oz) Sunflower oil
280g (9.3oz) All-purpose flour
160g (5.4oz) Granulated sugar
1 tbsp Tahini
1/2 Cup (4oz/120g) apple sauce
2 tsps Apple cider vinegar
1.5 tsps Baking powder
1 tsp Baking soda
1 tbsp Tapioca
Turn on the oven on 350F/170C.
In a mixing bowl mix well the orange juice and zest, oil, sugar, tahini, apple sauce and vinegar.
In a separate bowl mix the flour, baking powder, baking soda and tapioca, and transfer the dry mixture to the first bowl. Mix well and immediately transfer to the loaf pan and put in the hot oven.
Bake for 45-50 minutes or until the cake is stable in the middle and a toothpick stuck in the middle of the cake comes out dry and/ or with crumbs.
