This is such a symmetrical and beautiful dish I always wanted to learn how to make, and what it probably reminds everyone (The Disney movie!) got stuck in my head and made me think it's a challenge to get it done. In reality, it's super easy and simple to make, but still impressive and yummy! (and healthy!!). You would probably be able to find various recipes, based on all kinds of ingredients, since there isn't just one way to make it. I saw recipes that included tofu and others with flour.. I saw a version of this dish with chopped veggies with alternative seasoning, but I adhered to the veggies, so this one is both gluten free and soy free. I just wanted to create a rich and simple veggie dish to accommodate everyone's taste around the table. It definitely did the trick!
Ingredients
For the soup
2 celery stalks​
1 yellow onion
1/2 cup fresh parsley
1 sweet potato
1 wiped tbsp Salt

For the top veggies
2 tomatoes​
1-2 zucchini
1 potato
​
For the sauce
1/2 cup extra virgin olive oil
1 tsp Rosemary leaves
1 tsp Thymes
1 tsp Grounded black peppercorn
1 tsp Salt
Let's get cooking!
Cut all the veggies for the soup and place in a pot. You don't need to cut them to small pieces, as they're going to be mashed anyway.
Add water & salt and bring to boil. Then reduce the heat to medium and cook for about 45 minutes or until it softens.

Meanwhile, cut the tomatoes, zucchini and potato to thin rounded (as possible) slices. They shouldn't be paper-thin, but around 0.2cm/0.1''.

Turn on the oven on 360F/180C.
Put the slices aside until the soup is ready.
When your veggies in the soup are soft, pour soup with plenty of veggies to a bowl, and drain the fluids.
With a blender stick, mash the veggies until you get a smooth and consistent blend. Pour this blend onto the pie dish and spread it all over. On top of the veggie mixture, start placing the sliced raw veggies as shown in the picture (in 3/4 overlap) to complete a full outer circle. Then create the inner circle until there is no more visible room on the plate.
On top of the raw veggies, drizzle the sauce. Cover the dish with aluminum foil and bake in the oven for an hour with the foil on.
Then take off the foil and bake for 10 more minutes.

Serve with lentils patties or with madjadr'a
