Ingredients

Let's get chopping!

2 cups of cooked chickpeas

2 hearts of palm

1-2 inch piece of a seaweed

1/2 tsp Kala Namak (Indian 'black' salt)

2 tbsps soy-free Vegenaise (Follow your heart)

1/2 red pepper

2-3 tbsps corn

1/3 purple onion

1/3 cup chives

Please go to the "chickpea salad sandwich" recipe to learn how to easily handle and cook chickpeas.

Once you've got that one done, with a fork, mash the cooked chickpeas a little bit. The preferred texture would be somewhere between chunky and smooth. You definitely don't want a smooth texture, so stay on the chunkier side.

Chop the pepper, chives, heart of palm and onion and place in a mixing bowl. Add the rest of the ingredients, and mix well. Refrigerate until served.

Serve in a sandwich with fresh lettuce, cucumbers and tomatoes, or simply serve as a salad for brunch, with other veggies, spreads and baked goods!
